Egg Fried Rice with Pineapple



Here’s a tropical and flavorful recipe for Egg Fried Rice with Pineapple! The sweetness of pineapple balances the savory and spicy flavors, creating a delightful fusion dish.


Ingredients (Serves 2-3):

Main Ingredients:

  • 2 cups cooked rice (preferably day-old or cooled rice)
  • 2 large eggs, whisked
  • 1 cup fresh pineapple, diced (canned pineapple works too, but drain it well)
  • 2 tbsp vegetable oil (or sesame oil for added flavor)
  • 3-4 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1/2 cup capsicum (bell pepper), diced
  • 1/2 cup carrots, diced
  • 2 spring onions, chopped (reserve greens for garnish)

Seasonings & Sauces:

  • 2 tbsp soy sauce
  • 1 tsp vinegar (rice vinegar or white vinegar)
  • 1 tbsp oyster sauce (optional, for a richer flavor)
  • 1/2 tsp black pepper powder
  • 1/4 tsp chili flakes (optional, for heat)
  • Salt to taste

Instructions:

1. Prepare the Eggs:

  1. Heat 1 tbsp oil in a large pan or wok over medium heat.
  2. Pour in the whisked eggs and scramble until just set. Remove and set aside.

2. Stir-Fry the Pineapple:

  1. In the same pan, heat 1 tbsp oil.
  2. Add the diced pineapple and stir-fry for 1-2 minutes until slightly caramelized. Remove and set aside.

3. Stir-Fry the Vegetables:

  1. Add another drizzle of oil if needed. Sauté minced garlic until fragrant.

  2. Drizzle soy sauce, vinegar, and oyster sauce (if using). Sprinkle in black pepper and chili flakes.

5. Add Pineapple and Eggs:

  1. Gently mix in the scrambled eggs and caramelized pineapple chunks.
  2. Stir-fry for another minute to combine and heat through.

6. Garnish and Serve:
