Seekh Kebab Recipe
Seekh Kebabs are one of the most popular and flavorful types of kebabs made with minced meat, aromatic spices, and herbs. The meat is shaped onto skewers and grilled to perfection, creating a smoky and tender texture. Here's how to make Seekh Kebab at home:
Ingredients
For the Kebab:
- 500g minced mutton or chicken (or a mix of both)
- 1 large onion, finely chopped
- 1/4 cup fresh cilantro (coriander) leaves, chopped
- 1/4 cup fresh mint leaves, chopped (optional)
- 2-3 green chilies, finely chopped (adjust to taste)
- 1 tablespoon ginger-garlic paste
- 1 tablespoon garam masala powder
- 1 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1 teaspoon turmeric powder
- 1 tablespoon lemon juice
- Salt to taste
- 1/4 cup breadcrumbs (or soaked white bread)
- 1 egg (optional, helps bind the mixture)
- 1 tablespoon oil (for cooking)
- 1 tablespoon butter (optional, for glazing)
For Garnish:
- Fresh cilantro leaves
- Sliced onions
- Lemon wedges
- Mint chutney or yogurt-based sauce
Instructions
1. Prepare the Meat Mixture:
- In a large mixing bowl, combine the minced meat (mutton or chicken) with finely chopped onions, cilantro, mint (if using), green chilies, and ginger-garlic paste.
- Add the garam masala powder, cumin powder, coriander powder, red chili powder, turmeric powder, and salt to the bowl.
- Squeeze in the lemon juice for a tangy flavor.
- Add breadcrumbs (or soaked bread) to the mixture, which will help bind the kebabs and give them a softer texture.
- Crack an egg into the mixture and mix everything thoroughly with your hands or a spoon until well combined. The mixture should be firm but pliable.
2. Shape the Kebabs:
- Wet your hands with a little water or oil to prevent the mixture from sticking to your palms.
- Take small portions of the meat mixture and shape them into elongated, cylindrical forms around metal or wooden skewers. Make sure they are compact so that they don’t fall apart while grilling.
- Alternatively, you can shape the kebabs directly without skewers, forming them into small patties.
3. Grill the Kebabs:
- Preheat a grill or barbecue to medium-high heat.
- Brush the kebabs lightly with oil.
- Place the skewers on the grill and cook the kebabs for about 8-10 minutes on each side, or until they are cooked through and have a nice char.
- If you're using a stove-top grill or tawa (griddle), you can cook them in batches, turning occasionally until they are evenly browned and cooked through.
4. Glaze and Serve:
- Once the kebabs are grilled, you can brush them with melted butter to give them a rich, glossy finish.
- Garnish with fresh cilantro leaves, onion slices, and lemon wedges.
- Serve hot with mint chutney, yogurt sauce, or a side of naan or rice.
Serving Suggestions:
- Serve Seekh Kebabs as a starter with naan or paratha.
- They can also be enjoyed with a fresh vegetable salad or a cooling raita on the side.
- Pair them with a refreshing drink like mint lemonade for a complete meal.
Tips for Perfect Seekh Kebabs:
- Binding the Mixture: If the mixture is too loose and hard to shape, add a bit more breadcrumbs or soaked bread. Alternatively, you can add a little more egg for better binding.
- Moisture: Make sure not to overwork the meat mixture to keep the kebabs tender. Use cold water to moisten your hands while shaping the kebabs.
- Grilling: If using wooden skewers, soak them in water for 30 minutes before grilling to prevent them from burning.
- Spices: Adjust the amount of chili powder and garam masala based on your spice tolerance. You can also add some ground nuts (like cashews or almonds) to the mixture for extra richness.
Enjoy your delicious homemade Seekh Kebabs, perfect for a barbecue, party, or even a family meal!
