Veg Fried Rice Recipe


 


Here's a quick and tasty Veg Fried Rice recipe, perfect as a standalone meal or a side dish!


Ingredients (Serves 2-3):

  • 2 cups cooked rice (preferably a day old or cooled completely)
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 3-4 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 small carrot, finely diced
  • 1/2 cup green peas (fresh or frozen)
  • 1/2 cup capsicum (bell pepper), diced
  • 1/2 cup cabbage, shredded
  • 2 spring onions, chopped (reserve greens for garnish)

Seasonings & Sauces:

  • 1 tbsp soy sauce
  • 1 tbsp vinegar (white or rice vinegar)
  • 1/2 tsp black pepper powder
  • Salt to taste
  • 1/2 tsp sugar (optional, to balance flavors)
  • 1 tbsp chili sauce (optional, for spice)

Instructions:

1. Cook the Rice:

  • If using freshly cooked rice, spread it out on a tray or plate to cool completely. This prevents it from getting mushy when stir-frying.

2. Prep the Veggies:

  • Chop all the vegetables into small, even pieces for quick cooking.

3. Stir-Fry:

  • Heat a wok or large frying pan over high heat. Add the vegetable oil.
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • Add onions and stir-fry for 1 minute.
  • Add the carrots, peas, capsicum, and cabbage. Stir-fry for 2-3 minutes on high heat, keeping the vegetables crisp.

4. Add Sauces:

  • Lower the heat slightly and add soy sauce, vinegar, and chili sauce (if using).
  • Sprinkle salt, sugar (if using), and black pepper powder. Mix well to coat the vegetables evenly.

5. Add Rice:

  • Increase the heat and add the cooked rice to the wok.
  • Gently toss everything together to combine, ensuring the rice absorbs the flavors without breaking.

6. Garnish and Serve:

  • Sprinkle chopped spring onion greens on top.
  • Serve hot, with your favorite side dishes or as it is.

Tips:

  • Use leftover rice for the best texture.
  • Customize with mushrooms, corn, broccoli, or tofu for variety.
  • For a smoky flavor, cook on high heat and let the rice lightly char for a few seconds.
