Andhra Spicy Mutton Curry

 


This is a fiery and flavorful mutton curry from Andhra Pradesh, known for its bold spices and rich taste. Perfect for spice lovers, this dish pairs excellently with steamed rice, roti, or dosa.


Ingredients

For the Mutton:

  • 500g mutton (bone-in pieces)
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tbsp ginger-garlic paste
  • Salt to taste

For the Masala Paste:

  • 1 tbsp oil
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 2–3 dry red chilies
  • 1 tsp black peppercorns
  • 3–4 garlic cloves
  • 1 medium-sized onion, sliced
  • 1/4 cup grated coconut

For the Curry:

  • 3 tbsp oil (preferably groundnut or sesame oil)
  • 2 medium onions, finely chopped
  • 2 green chilies, slit
  • 2 medium tomatoes, finely chopped
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 tsp coriander powder
  • 1/2 tsp garam masala
  • A few curry leaves
  • 1/4 cup tamarind extract (optional, for tanginess)
  • 2 cups water (adjust as needed)
  • Fresh coriander leaves, chopped (for garnish)

Instructions

1. Marinate the Mutton:

  1. Clean the mutton pieces and marinate them with turmeric powder, red chili powder, ginger-garlic paste, and salt.
  2. Let it rest for 30 minutes to 1 hour.

2. Prepare the Masala Paste:

  1. Heat 1 tbsp oil in a pan.
  2. Add coriander seeds, cumin seeds, fennel seeds, dry red chilies, and black peppercorns. Sauté until aromatic.
  3. Add garlic, sliced onion, and grated coconut. Roast until golden brown.
  4. Let it cool, then grind to a smooth paste with a little water.

3. Cook the Mutton:

  1. Pressure cook the marinated mutton with 1 cup water for 4–5 whistles, or until tender.
  2. Reserve the mutton stock for the curry.

4. Prepare the Curry Base:

  1. Heat oil in a large pan or wok.
  2. Add curry leaves and sauté for a few seconds.
  3. Add chopped onions and green chilies, and sauté until golden brown.
  4. Add the chopped tomatoes and cook until they turn soft and mushy.

5. Add Spices and Masala Paste:

  1. Stir in turmeric powder, red chili powder, and coriander powder. Mix well.
  2. Add the ground masala paste and sauté for 2–3 minutes until the oil starts separating.

6. Combine Mutton and Gravy:

  1. Add the cooked mutton along with the stock to the pan.
  2. Mix well and let it simmer for 10–15 minutes, allowing the flavors to blend.

7. Finish the Curry:

  1. Stir in tamarind extract (if using) and garam masala. Simmer for another 5 minutes.
  2. Adjust salt and spice levels as needed.
  3. Garnish with freshly chopped coriander leaves.

Serving Suggestions

  • Best with: Steamed rice, chapati, naan, dosa, or ragi mudde (millet balls).
  • Serve with a side of ghee and crispy appalam (papad) for a complete meal.
