Ingredients

  • 2 cups cooked rice (preferably day-old, chilled)
  • 1/2 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup mixed vegetables (peas, carrots, corn, etc.)
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil (or any neutral oil)
  • 1/2 tsp ground black pepper
  • Salt to taste
  • 2 green onions, chopped (for garnish)
  • Optional: chili sauce or hot sauce (for heat)

Instructions

  1. Prepare the IngredientsBeat the eggs in a small bowl and set aside.Cut the chicken into bite-sized pieces and season with a pinch of salt and pepper.Chop the onion, garlic, and green onions, and have your soy sauce and sesame oil ready.
  2. Cook the ChickenHeat 1 tablespoon of vegetable oil in a large wok or frying pan over medium-high heat.Add the chicken and cook until golden brown and cooked through, about 5-6 minutes. Remove the chicken from the pan and set it aside.
