Egg Fried Rice with Tofu Recipe






Here’s a delicious and protein-packed recipe for Egg Fried Rice with Tofu! This dish combines the richness of eggs with the texture and flavor of tofu for a hearty and satisfying meal.


Ingredients (Serves 2-3):

For the Tofu:

  • 200g firm tofu, cut into small cubes
  • 1 tbsp cornstarch (optional, for a crispy coating)
  • 1 tbsp soy sauce
  • 1 tbsp vegetable oil

For the Fried Rice:

  • 2 cups cooked rice (preferably day-old or cooled rice)
  • 2 large eggs, whisked
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 3-4 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1/2 cup carrots, diced
  • 1/2 cup green peas (fresh or frozen)
  • 1/2 cup capsicum (bell pepper), diced
  • 2 tbsp soy sauce
  • 1 tbsp vinegar (white or rice vinegar)
  • 1/2 tsp black pepper powder
  • Salt to taste
  • 2 spring onions, chopped (reserve greens for garnish)

Instructions:

1. Prepare the Tofu:

  1. Toss tofu cubes with cornstarch (if using) for a crispy texture.
  2. Heat 1 tbsp oil in a non-stick pan and pan-fry the tofu until golden and slightly crispy on all sides. Sprinkle with soy sauce and set aside.

2. Scramble the Eggs:

  1. In the same pan, heat 1 tbsp oil.
  2. Pour in the whisked eggs and cook, stirring continuously, until scrambled and set. Remove and set aside.

3. Stir-Fry the Vegetables:

  1. Heat 1 tbsp oil in a wok or large frying pan over medium-high heat.
  2. Add minced garlic and sauté for 30 seconds until fragrant.
  3. Add onions, carrots, peas, and capsicum. Stir-fry for 2-3 minutes until the veggies are tender yet crisp.

4. Combine Everything:

  1. Add the cooked rice to the wok with the veggies.
  2. Drizzle soy sauce and vinegar over the rice, and season with black pepper and salt. Toss well to coat.
  3. Add the scrambled eggs and tofu to the rice. Gently mix everything together.

5. Garnish and Serve:

  1. Sprinkle with spring onion greens.
  2. Serve hot, with extra soy sauce or chili sauce on the side.

Tips:

  • For extra flavor, drizzle a bit of sesame oil before serving.
  • Add chili flakes or sriracha if you like it spicy.
  • Feel free to include other veggies like broccoli, mushrooms, or zucchini.
