Groundnut Chutney (also known as Peanut Chutney)

 





Groundnut Chutney (also known as Peanut Chutney) is a creamy, nutty, and flavorful South Indian side dish. It pairs wonderfully with idly, dosa, vada, or even as a spread or dip. Here's how you can prepare it:


Ingredients

For the Chutney:

  • 1/2 cup raw peanuts (groundnuts)
  • 2-3 dried red chilies (adjust to taste)
  • 2 garlic cloves (optional)
  • 1 small piece of tamarind or 1/2 tsp tamarind paste (optional)
  • 1/4 cup grated coconut (optional, for creaminess)
  • Salt to taste
  • Water as needed

For the Tempering:

  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • 1-2 dried red chilies
  • A few curry leaves
  • A pinch of asafoetida (hing, optional)

Instructions

1. Prepare the Chutney:

  1. Roast the Peanuts: Dry roast the peanuts in a pan over medium heat until golden and aromatic. Let them cool and remove the skins by rubbing them between your palms (optional).
  2. Sauté the Spices: In the same pan, heat 1/2 teaspoon of oil and roast the dried red chilies and garlic until fragrant.
  3. Blend the Chutney: Add the roasted peanuts, red chilies, garlic, tamarind, grated coconut (if using), salt, and water to a blender. Blend into a smooth or slightly coarse paste, adding water gradually to reach your desired consistency.

2. Prepare the Tempering:

  1. Heat oil in a small pan.
  2. Add mustard seeds and let them splutter.
  3. Add dried red chilies, curry leaves, and asafoetida. Sauté for a few seconds until aromatic.
  4. Pour the tempering over the prepared chutney and mix well.

Tips for Perfect Groundnut Chutney

  • Nutty Flavor: Roasting the peanuts thoroughly enhances their flavor.
  • Variations: Skip tamarind for a pure peanut flavor.Add a small piece of ginger for a spicy twist. Use green chilies instead of red for a different flavor profile.
  • Consistency: Adjust water to make the chutney thicker for dips or thinner for pairing with rice.
