Ingredients
For the Chutney:
- 1/2 cup raw peanuts (groundnuts)
- 2-3 dried red chilies (adjust to taste)
- 2 garlic cloves (optional)
- 1 small piece of tamarind or 1/2 tsp tamarind paste (optional)
- 1/4 cup grated coconut (optional, for creaminess)
- Salt to taste
- Water as needed
For the Tempering:
- 1 tsp oil
- 1/2 tsp mustard seeds
- 1-2 dried red chilies
- A few curry leaves
- A pinch of asafoetida (hing, optional)
Instructions
1. Prepare the Chutney:
- Roast the Peanuts: Dry roast the peanuts in a pan over medium heat until golden and aromatic. Let them cool and remove the skins by rubbing them between your palms (optional).
- Sauté the Spices: In the same pan, heat 1/2 teaspoon of oil and roast the dried red chilies and garlic until fragrant.
- Blend the Chutney: Add the roasted peanuts, red chilies, garlic, tamarind, grated coconut (if using), salt, and water to a blender. Blend into a smooth or slightly coarse paste, adding water gradually to reach your desired consistency.
2. Prepare the Tempering:
- Heat oil in a small pan.
- Add mustard seeds and let them splutter.
- Add dried red chilies, curry leaves, and asafoetida. Sauté for a few seconds until aromatic.
- Pour the tempering over the prepared chutney and mix well.
