Idly Podi (also known as Idly Milagai Podi)

 


Idly Podi (also known as Idly Milagai Podi) is a spicy and flavorful South Indian condiment made with roasted lentils, spices, and red chilies. It is typically mixed with sesame oil or ghee and served with idly, dosa, or even steamed rice. Here's how you can make it at home:


Ingredients

  • 1/2 cup urad dal (split black gram)
  • 1/4 cup chana dal (split Bengal gram)
  • 6-8 dried red chilies (adjust to taste)
  • 2 tbsp sesame seeds (optional, enhances flavor)
  • 1/4 tsp asafoetida (hing)
  • 1/2 tsp salt (or to taste)
  • 1-2 tsp jaggery (optional, for a slight sweetness)
  • 1 tsp oil (for roasting)

Instructions

1. Roast the Ingredients:

  1. Heat 1 tsp of oil in a pan over medium heat.
  2. Add urad dal and roast until golden and aromatic. Transfer to a plate to cool.
  3. Roast chana dal in the same pan until golden. Remove and let it cool.
  4. Add dried red chilies and roast until crisp. Set aside.
  5. Dry roast sesame seeds (if using) until they start to pop. Remove from heat.
  6. Lastly, add asafoetida to the warm pan for a few seconds and set aside.

2. Blend the Podi:

  1. Once all the roasted ingredients have cooled, transfer them to a blender.
  2. Add salt and jaggery (if using).
  3. Blend to a coarse powder. Avoid over-grinding, as the texture should remain slightly grainy.
  4. Taste and adjust salt or spiciness as needed.

Storage

  • Store the idly podi in an airtight container at room temperature. It stays fresh for 2-3 weeks. For longer shelf life, refrigerate it.

How to Serve

  • Mix 1-2 teaspoons of idly podi with sesame oil or ghee.
  • Serve it alongside idlies, dosa, or steamed rice for a spicy and flavorful kick.
