Mint Chutney (also known as Pudina Chutney)

Ingredients

For Mint Chutney:

  • 1 cup fresh mint leaves (pudina), tightly packed

  • 1 small piece of ginger (1/2 inch, optional)
  • 2 tbsp grated coconut (optional, for creaminess)
  • 1 tsp roasted chana dal or peanuts (optional, for texture)
  • 1 tbsp lemon juice or tamarind pulp
  • 1/4 tsp sugar (optional, to balance flavors)
  • Salt to taste
  • Water as needed

For Tempering (optional, for South Indian meals):

  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • A few curry leaves
  • A pinch of asafoetida (hing)

Instructions

1. Prepare the Chutney:

  1. Clean the Herbs:Wash the mint and coriander leaves thoroughly to remove dirt.
  2. Blend the Ingredients:In a blender, combine mint leaves, coriander leaves, green chilies, ginger, coconut, roasted chana dal (if using), lemon juice or tamarind, sugar, and salt.Add a small amount of water and blend to a smooth or slightly coarse paste. Adjust the water to reach your desired consistency.
  3. Taste and Adjust:Check for seasoning and adjust salt, tanginess (lemon or tamarind), or spice (chilies) as needed.

2. Prepare the Tempering (Optional):

  1. Heat oil in a small pan.
  2. Add mustard seeds and let them splutter.
  3. Add curry leaves and a pinch of asafoetida. Sauté for a few seconds.
  4. Pour this tempering over the prepared chutney for added flavor.

Serving Suggestions

  • For Snacks: Serve with pakoras, samosas, kebabs, or sandwiches as a dip.
  • With Meals: Pair with idlies, dosas, or even rice and dal for a refreshing side.
