Thai Egg Fried Rice (Khao Pad) Recipe




Thai Egg Fried Rice (Khao Pad) is a flavorful and aromatic dish that’s easy to make and full of vibrant Thai flavors. It's a great way to use up leftover rice and features fragrant jasmine rice, eggs, and a delicious mix of savory seasonings. Here's a recipe to make Thai-style egg fried rice:


Ingredients

  • 2 cups cooked jasmine rice (preferably chilled, day-old rice works best)
  • 2 large eggs
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup diced carrots (optional)
  • 1/2 cup peas (optional)
  • 1-2 green onions, chopped (for garnish)
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce (for authentic flavor)
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sugar
  • 1 tbsp lime juice (freshly squeezed)
  • 1 tbsp vegetable oil (or sesame oil for extra flavor)
  • 1-2 Thai bird's eye chilies, chopped (optional for spice)
  • Fresh cilantro leaves (optional, for garnish)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Ingredients Beat the eggs in a small bowl and set them aside. Chop the onion, garlic, green onions, and chilies (if using). Prepare any other vegetables you'd like to add, such as diced carrots or peas. Have your soy sauce, fish sauce, oyster sauce, and lime juice ready.
  2. Cook the Eggs Heat 1 tablespoon of oil in a large frying pan or wok over medium heat. Add the beaten eggs and scramble them until just cooked through. Remove from the pan and set aside.
  3. Sauté the Aromatics In the same pan, add a little more oil if needed. Sauté the onion and garlic for 1-2 minutes until fragrant and softened. Add the chopped bird’s eye chilies (if using), and sauté for another 30 seconds.
  4. Stir-Fry the Rice Add the chilled rice to the pan, breaking up any clumps with your spatula. Stir-fry the rice for 2-3 minutes until heated through and lightly golden.
  5. Season the Rice Add the soy sauce, fish sauce, oyster sauce, and sugar. Stir well to evenly coat the rice with the sauces. If you’re adding peas and carrots, toss them in now and stir-fry until heated through.
  6. Combine the Eggs and Rice Add the scrambled eggs back to the rice and mix everything together until well combined.
  7. Finish and Garnish Stir in the lime juice and give the rice a final toss. Garnish with fresh cilantro leaves and chopped green onions.
  8. Serve Serve your Thai egg fried rice with extra lime wedges on the side. You can also pair it with Thai chili sauce or sweet chili sauce for added flavor.
